First of all, any baker needs a
mixer. Hand helds are obviously less
expensive and work just find. However, high quality stand mixers are
divine.

Mixing
Bowls
There two main features to look for in a set of
mixing bowls. You want
them to be heat safe, and to stack within each other, called “nesting”.
Stainless steel, tempered glass or ceramic bowls work best for me in my
kitchen. I don’t
use plastic bowls because
they tend to retain odors (like a balsamic vinegar from a salad, which
doesn’t
go well with butter cake mix), and they can absorb fats. Who wants
extra fat,
right? I also stay away from aluminum bowls because they can react to
acidic
ingredients. I once made a fresh lemon cake and wondered why it tasted
like
metal. It was because I mixed it up in my aluminum bowl! Live and
learn.

Measuring
Cups
You’ll need measurers for dry and wet ingredients.
For wet ingredients
I use a little Pyrex glass pitcher with red writing (2 cups) that you
probably
have in your kitchen already, and can be purchased at any grocery
store. It’s a
very common item.
For dry ingredients, I like to use a nesting
stainless steel set…again
not plastic or aluminum for reasons I listed above in the bowl section.
