Mixers
First of all, any baker needs a mixer. Hand helds are obviously less expensive and work just find. However, high quality stand mixers are divine.

KitchenAid 4.5 qt. Lift Bowl Model Stand Mixer - K4SSWH

Kitchenaid Stationary Mixer I have had this mixer in dark grey for 12 years now. It lives in my counter and I use it every chance I get. You just throw in the ingredients, press a button, and it does the job. It's totally hands-free. You can add in more ingredients while it's mixing. Any multi-tasker needs this product!

This KitchenAid mixer comes with a 4.5 qt. brushed stainless steel mixing bowl that is able to knead two loaves of bread dough at one shot. A powerful 300-watt motor and a brushed stainless steel mixing bowl make this appliance a baker's dream.

Mixing Bowls

There two main features to look for in a set of mixing bowls. You want them to be heat safe, and to stack within each other, called “nesting”. Stainless steel, tempered glass or ceramic bowls work best for me in my kitchen.  I don’t use plastic bowls because they tend to retain odors (like a balsamic vinegar from a salad, which doesn’t go well with butter cake mix), and they can absorb fats. Who wants extra fat, right? I also stay away from aluminum bowls because they can react to acidic ingredients. I once made a fresh lemon cake and wondered why it tasted like metal. It was because I mixed it up in my aluminum bowl! Live and learn.

I’ve listed my favorite stainless steel, tempered glass and ceramic bowls here, all from Sur La Table which has an excellent return policy just in case they don’t work out for you.

Measuring Cups

You’ll need measurers for dry and wet ingredients. For wet ingredients I use a little Pyrex glass pitcher with red writing (2 cups) that you probably have in your kitchen already, and can be purchased at any grocery store. It’s a very common item.

For dry ingredients, I like to use a nesting stainless steel set…again not plastic or aluminum for reasons I listed above in the bowl section.

Cake Pans
I’ve gone through a lot of cake pans, and I learned from experience and now only used heavy gage aluminum

Deep Round Cake Pans

These heavy-gauge aluminum pans will control the heat for a well-baked cake throughout. Combine sizes to create multilayered, tiered cakes. Heavyweight aluminum with seamless, straight angled sides.

What I usually do before baking a cake is start stacking some of the pans up on my counter to get a visual of what my tiers will look like as an actual cake. It really helps visualize the final product.   Learn More >>
