Cheesecake Cupcakes
This recipe for cheesecake cupcakes is the best one ever. I'm such a huge fan and encourage brides to consider serving these at their wedding if they are too. Enjoy! This recipe is adapted from opensourcefood.com. Ingredients • 2 cups of crushed graham crackers • 4 tablespoon of butter, melted • 2 (8 ounce) packages cream cheese (room temperature) • 3/4 cup white sugar • 2 eggs • 2 teaspoons vanilla extract • 1 (21 ounce) can cherry pie filling
1. Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with liners
2. Crush the graham crackers and mix with butter. Place 1 tablespoon of this mixture in each cupcake liner, and press down on the mixture to make the crust.
3. In a mixing bowl, beat cream cheese (make sure it's at room temperature), sugar, eggs and vanilla until light and fluffy.
4. Fill each cupcake liner with the cream cheese mixture, almost to the top.
5. Bake for 15 minutes. Remove from oven and cool.
6. Top with a teaspoonful of cherry pie filling.
7. Remove liner before serving (optional) These desserts look wonderful when you top them with some fresh fruit like a couple slices of strawberries or blueberries, or raspberries. Take it up a notch and mix the fruit with a bit of fruit jam or sauce. Once these desserts are complete, it's pretty obvious to most that they contain dairy products. When guests are having a blast at your wedding though, it's possible they may not notice. It's always a good idea to politely mark the dessert table where these little guys are displayed with a little sign that alerts folks that they contain dairy products. Be sure to choose a fun and creative cupcake holder that matches the decor or overall color scheme of your event. Don't forget to display your creations on a cupcake stand to let all of your hard work stand out and shine. Have fun with it!
