Chocolate
covered strawberries never seem to go out of style. There are so many
ways to decorate them with
contrasting dark and white chocolate. They look equally good lined up
in uniform or piled up in clusters.
I've
seen so many recipes for these guys that use
shortening, butter, heavy whipping cream and more. I keep it real
simple, all I do is slowly melt chocolate morsels! I always go for semi
sweet morsels, because they absolutely taste the best.
If
you're splurging for a special event, then go for some Guittard
semi-sweet morsels. You can find large morsels in the baking section of
the grocery store, or at any baking supply store. I get mine from Spun
Sugar in Berkely. If you'd not to fork out the cash on high
end
chocolate then Nestle semi-sweet morsels will do just fine.
I can usually cover about twenty medium to large sized strawberries
with one 16 oz. package of morsels. Here are the steps:
Wash
the strawberries well, and let them dry completely. It's important to
*not* dip wet strawberries in chocolate or the chocolate won't stick.
Pour
all morsels into a saucepan. Heat on low heat, stirring constantly
until completely melted. Turn off the burner. Tilt the sauce pan to one
side so all of chocolate gathers in one area, this makes for easier
dipping. Begin dipping strawberries one by one, by holding tips of
green stem with your fingers in one circular sweep.
After
about ten dips, the chocolate starts to thicken. Put your burner on low
again, and stir until the chocolate is completely melted.
Place each dipped strawberry on a sheet of parchment paper until it
dries.
