chocolate oatmeal cookie ice-cream sandwiches

Over several glasses of champagne on New Year's Eve we decided to bake some chocolate chip oatmeal cookies. We then made them into ice-cream sandwiches out of with vanilla ice-cream. They were so yummy and so comforting. I think this would be a great idea for a wedding. They could be made beforehand, assembled by the caterer or just left out at a dessert station for guests to make their own.
