If you are into adorning your dessert with fresh blooms, consider crystallized them with sugar. So how is it done? Crystallized flowers are made by covering them with superfine sugar. Bakers get the sugar to stick to the petals by covering it first with egg whites or meringue powder. Petals are usually separated from each other to prevent too much wilting. Most bakers crystallize their own blooms, but they can be purchased already done, which is pretty expensive. Some commonly used are: Roses:Roses are edible and look amazing on pastries and cakes for weddings and birthdays. The darker the rose, the sweeter and more vibrant the taste of the bud. Use them as garnishes on ice cream and salads, or freeze the petals in ice cubes for an elegant addition to party drinks. Just make sure and remove the bottom part of the rose bud, which is white in color and imparts a bitter, unpleasant taste. Sunflower:Sunflowers aren't just for eating the seeds. The flowers have a bittersweet taste similar to artichokes. They are best eaten as buds, and can be steamed and eaten just as is, or the petals can be used in dishes or desserts. Lavender:Lavender makes a delicious addition to desserts such as ice cream, and even meat dishes such as lamb and beef. It can be used in stews or baked into bread. Lavender has a lemony citrus type flavor, with an aromatic scent. Float lavender blooms in a glass of champagne for a romantic treat. Nasturtium:Nasturtium is the most common edible flower. It has a spicy, peppery flavor and adds a kick to salads, cheese dishes and appetizers. Use it as a garnish for a buffet platter. Grow them in a hanging basket and pick the flowers and leaves when they are very young for the best-tasting blooms.
