What's most popular these days? Definitely the "look like they're falling over" styles. Topsy turvy cakes (also called Mad Hatter, Earthquake, Alice in Wonderland…and probably many other things) do really look like they’re about to fall over.

Don’t fret! They have various forms of construction and all make them quite stable and balanced. Layers are cut diagonally and stacked to give the unbalanced look. Usually the top portion is gutted in the center to give the next layer something to sit flat on. Then dowels are inserted through all layers to keep the whole thing intact. These whimsical lop sided wonders are not always, but most often brightly colored, at least 3 tiers to get the full effect, and a great conversation piece for guests. Due to the playfulness of the structure, playful décor is also used.

Where do they fit in? Mostly laid back informal weddings. However! They're occasionally decorated with a formal motif: all white layers with varied white decor and embellishments.A lot of bakers tend to prefer using something dense such as pound, for topsy turvy construction. The preferred frosting is fondant for its maneuverability over strange shapes and for its smooth finish.

Next to topsy turvy, there are various other whimsical styles and construction. Like square layers that are stacked at forty five degree angles instead of parallel to one another. Or stacked in a fan fashion creating a cascading "stepped look". How about different layers of different shapes and heights? All different, and all with so much personality.
