Some venues do not allow outside food, so check first if you want to bring in your own cake.
What you need to bake your own cake:
Kitchenaid mixers
Magi-cake strips
Heavy straight sided aluminum pans, 2” deep (Magic line & wilton’s decorator Preferred are good brands). Catalogs like Parish’s and Beryl’s carry them.
If handled carefully, stored properly to prevent denting, pans should last a lifetime.
Cooling racks
Iceing spatula
Turntable
16” slicing knife,
Baking core
Measuring cups and spoons
Cardboard rounds
Parchment paper
Cake drums
Pastry bags
Decorating tips
Cookie cutters and gum paste cutters
Leaf veiners
Blue magic
Wooden dowels
Bench scrapers
Gel paste food colors
Before freezing layers ahead of time. Put a thin coat of butter cream all over the cake – it will form a moisture proof seal, to help prevent drying.
Use flower spikes to insert flowers into cakes (they hold water)
Make sure cake tables are sturdy, 30” round is standard.
