Make your own
wedding cake? YES you can. Do you really need pay the inflated prices
associated with nuptials? No you don't. Taking on this huge baking
project can truly be a labor of love, by any ambitious novice baker, as
their gift to the couple. Any bride and groom can also get involved, as
long has you have someone to deal with the "day of" details and
transportation.
Sure there's some
excellent "from scratch" cake
recipes out there, we list many on our
site. If you don't own a mixer, and just aren't into the "from scratch"
thing, then for heavens sake, just use box cakes. There are some
reports out there they say that box cakes actually taste better,
preservatives and all. Imagine that!
For icing and
decor,
the absolutely easiest route possible is buttercream
frosting
and fresh
flowers for decoration. Easy, done. If you haven't worked
with fondant
before, and you don't have the time for lots of practice,
then stay away from it. Good looking fondant takes time, practice and
skill.

For any busy
novice, it may make sense for you to begin the cake baking process
ahead of time. If so, then you'll need to freeze your cakes. Here are
tips for proper freezing:
- Allow your cake to fully cool before freezing it
- Make sure you have ample flat, level room in your freezer
- Completely wrap
your cake with plastic wrap, then foil
- Remove your
cake from the freezer 24 hours before you decorate it, so it can thaw
- Only remove the plastic wrap when you’re ready to frost and decorate
