Mexican Cookies Recipes

If you're having a dessert station at your wedding, it won't be complete without fabulous Mexican cookies recipes. Our favorite is of course, the Mexican Wedding Cookie. It blends so well with any wedding decor because of it's look, color and name!They're usually popular Christmas dessert and got their name from being served at traditional Mexican weddings. In many places they're better known as Snowball Cookies, we'll let you guess why. Adapted from eHow.com and makes 2 dozen. Ingredients: 2 cups all-purpose flour 1/2 tsp almond extract 3/4 cup chopped pecans 3/4 cup powdered sugar 1/2 tsp salt 1 cup unsalted butter 2 tsps vanilla extract
Instructions: Heat the oven to 350 degrees. Spread the pecans on a baking sheet and toast in the oven until lightly browned, about 6-8 minutes. Cool. Process pecans in a blender or food processor or finely chop with a knife. Beat the butter, salt, vanilla, almond extract and 1/2 cup of the powdered sugar until fluffy. Add the pecans. Add the flour until incorporated. Roll the dough into balls the size of large marbles. Place on a greased baking sheet and bake for 15 minutes or until just starting to brown. Remove from the baking sheet to cool thoroughly, then roll in the remaining powdered sugar. If you're into decorating these guys, a simple decorating set can be used. These little desserts are also complemented well with that of the snickerdoodle. The mixture of spices in your mouth is yummy! Enjoy!
