Mini Desserts
Mini desserts, usually displayed on a “station” table are a less expensive alternative to the tradition. We’ve planned a lot of events with a variety of delectable treats, here are some of our favorites:
Petit fours: A great alternative for a dessert station or on a tiered display. Petit four is a French word meaning "small oven". They are usually a geometrically cut piece of sponge cake or geniose, filled with butter cream icing, and topped with fondant.
Chocolate Bouchons: If you’ve ever been to the Bouchon Bakery in Yountville, Las Vegas or New York you may know what we’re talking about. “Bouchon” is the French word for corks, from which they take their shape. These little guys have the consistency of brownies, but taste 1000 times better. Top them off with a dusting of powdered sugar. They’re adorable in any display. William Sonoma even has their own Bouchon mold and mix. You could make your own!
Chocolate Fountain Recipe:The success of your waterfall of deliciousness depends on your chocolate fountain recipe. Since the chocolate fountains used at weddings are industrial size, it makes the most sense to rent them. Some couples use the fountain for both appetizers and dessert, or just as the "cake" for dessert. Rentals usually include delivery to the reception site, dipping skewers, table presentation, set-up and tear down from a professional attendant, and the ingredients.
Chocolate Covered Strawberries: These never seem to go out of style. There are so many ways to decorate them with contrasting dark and white chocolate. They look equally good lined up in uniform or piled up in clusters. I've seen so many recipes for chocolate covered strawberries that use shortening, butter, heavy whipping cream and more. I keep it real simple, all I do is slowly melt chocolate morsels!
Whoopie PiesServe up some whoopie pies at your wedding and your guests will be thanking you later. Fill with your favorite ice-cream and they'll be doing more than just thanking you later.
Gourmet Cookies: Biscotti, Mexican Wedding Cake, Sugar Cookies, or any of your favorite or homemade recipes. At a wedding we planned in Berkeley, CA a few years ago, the mother and grandmother of the bride, surprised the bride and groom with platters and platters of homemade cookies. All of the cookies were of an Italian variety, made from ancient family recipes. The cookies paired perfectly with the cake, and the heartfelt moments that we experienced with their lovely family that day, is why we love planning special events.
Croquembouche: A traditional French pastry for nuptials is the croquembouche wedding cake. It's really fun to say with a Julia Child accent, try it. When we get a chance, we'll add the audio file. The name comes from the French words 'croque en bouche' meaning 'crunch in the mouth'.
Wedding Candy: A candy station where guests can help themselves has not gone out of style yet! The goodies can either be served into a ceramic cup or glass bowl to enjoy at the wedding, or you can provide little boxes, velum bags or other containers for guests to scoop their own candy or treats and take home as favors.
