No Nuts in Carrot Cake

I'm getting married this spring, and had really wanted a carrot cake wedding cake. We were told by our baker that without knowing all of our guest's dietary constraints, it would be most polite to not offer a dessert that has nuts. We'll be having over 250 guests, many friends and colleagues of my fiance's parents, so I definitely do not know if any of them are allergic to nuts. It would be quite awkward to contact each of them to inquire as well. In case any of them are allergic to nuts, we would hate for them to miss the dessert...so we decided to go with no nuts.

Thanks for the recipe above. We have our weddinng cake covered by a professional baker, but the recipe posted on this page will come in handy when planning parties in the future. I love carrot cake!
