Pound cake recipes consist of equal parts of flour, butter, eggs and sugar. Traditionally, they were made with a pound of each of the four ingredients, hence the name. But the ingredients don't each need to be any certain amount, as long as the ratio remains 1:1:1:1.

There are many different types, depending on the part of the world. Some using vanilla or almond extract, or dried fruit. Some recipes have added baking soda for a less dense cake. Some substitute vegetable oil for butter, which makes a more moist result. Sour cream can be substituted for butter, which gives the cake a tangy flavor. With all of these variations, it’s still called the same thing!

This type of dessert is often used in the topsy turvy designs, because it's so dense and strong and can withstand the cutting and molding of the uneven layers.

Ingredients

1 cup margarine1/2 cup shortening3 cups white sugar5 eggs2 1/2 cups all-purpose flour1/2 cup self-rising flour1 cup evaporated milk1 tablespoon lemon extract1/2 teaspoon vanilla extractDirections

Don't preheat oven. Grease and flour a 10 inch tube or Bundt pan. Sift together the all purpose flour and self-rising flour; set aside.In a large bowl, cream together the margarine, shortening and sugar until light and fluffy. Beat in the eggs one at a time. Alternately beat in the flour mixture and the milk, mixing just until incorporated. Finally, stir in the lemon extract and vanilla.Pour batter into a 10 inch tube or Bundt pan. Place cake in cool oven and set oven to 350 degrees F (175 degrees C). Bake for 1 hour and 15 minutes, or until toothpick inserted in center comes out clean.
