Thanks so much for including this recipe for red velvet cake with beets. What a healthy idea. I hate using food dyes, I hear they're so bad for you.

finally a red velvet recipe that's not alien-ish!

I have always had a problem with the massive amounts of dye in red velvet cakes! I really like the look of them and want one for my wedding, but changed my mind when my sister had red velvet cupcakes for her daughter's birthday party and there was red stains ALL OVER THE FLOOR from the kids (and adults) dropping bits of cake. We poured water on the carpet to get the color out, but all it did was spread the color, fast. Can you imagine this happening at your wedding venue? You may not see your security deposit again. Anyway, thanks for posting. Beets have a lot of color too, but no where near the amount that food dye has.

My child has ADHD so I avoid foods with food dye when possible. This is a great solution for my problem, and for my waistline.
