Spirited Fruit Cake

by Jennifer
(Clarksville, In)

About 40 plus years ago, my former mother-in-law gave me a fruit cake recipe. I do not know where she got this recipe but it was a dark fruit cake with all of the candied fruit, dates, figs, raisins, pecans, molasses, 5 eggs, spices and brandy. It may have come from a Courier-Journal Sunday Magazine, Louisville, KY. I made this fruit cake for years; often making 10 to 20 loaves in one season to give as gifts (it made a nice size cake or three loaf size cakes). I would start in October and soak them in Brandy soaked cheescloth til just before Christmas. About three years ago, the recipe disappeared from my counter top. I have searched thru all of my loose recipes and my cookbooks. I have almost grieved over the loss of this recipe (It also had a wonderful Jam Cake recipe on the backside of the paper). My former mother-in-law passed away a few months ago and I was allowed to search thru her recipes but did not find it. I found a similar recipe today on southernfood.about.com website - Spiced Dark Fruitcake With Brandy; going to try this.
