Wedding cake that
tastes heavenly will have your guests asking for a 2nd piece, even if
they are on a diet. At a recent event we attended, the confection was 3
layers – each with a different type, filling and icing. I was hesitant
to even have a piece, because it's not my favorite and I usually pass.
The first piece was decadent. Dare I try another? But of course. The
2nd piece even better! A 3rd? There was plenty, why not? This kind of
damage requires an extra 30 minutes on the treadmill…but boy, was it
worth it. Wouldn’t you want all of your guests to have the same

A chiffon cake is a very light cake made with vegetable oil, eggs,
sugar, flour, baking powder, and flavorings. Chiffon cakes, like angel
cakes and other foam cakes, get their fluffy texture by beating egg
whites until stiff, and folding them into the cake batter before
baking.

ingredient that makes them so appealing? It’s pretty simple. Beets or
red food coloring. Yup, that’s it. It’s a rich, moist, and sweet with a
reddish or even brownish color – usually topped with a creamy white
icing, cream cheese or buttercream.
Butter Cake
The main ingredient of a butter cake is…yup you guessed it! These yummy
desserts are considered one of the quintessential desserts in American
baking. They are derived from the English poundcake, with a bit of
added baking powder for leavening, producing a much lighter and
fluffier version.
Pound Cake Recipes
Pound cake recipes consist of equal parts of flour, butter, eggs and
sugar. Traditionally, they were made with a pound of each of the four
ingredients, hence the name. There are many different types, some using
vanilla or almond extract, or dried fruit. Some recipes have added
baking soda for a less dense cake. This type is most often used on
topsy
turvy cakes because of its density.
Genoise
A génoise cake is an Italian sponge cake (named after Genoa, Italy)
that uses air suspended in the batter during mixing for its volume. The
batter is often baked to form a thin sheet, as used in Tiramisu. Or the
thin sheets are coated with a thin layer of jam or chocolate spread and
rolled. I made one of these in Italy on a hot August day with my
relatives…it was my one and only cooking experience in Italy. The
batter can also be piped to create strips, which form ladyfingers, or
poured into molds to make treats such as madelines.
Fruit Cakes
The wow factor for fruit cakes is, hands down, the alcohol! The typical
American versions are rich in florescent looking fruit and nuts, but
very dry and alcohol free…we’re convinced this is why here in America,
its loathed and the brunt of holiday jokes. It usually gets thrown in
the trash right? Traditional recipes are saturated with wine, rum,
brandy or other liquors and covered in powdered sugar. The longer they
soak (we're talking weeks), the more rich, moist and flavorful they
become. Now THAT sounds deelish.
Cheese Cake Recipe
Hands down, the BEST Cheese Cake Recipe EVER, is my grandma’s recipe.
Nothing I have ever tasted comes remotely close. I never met my
grandma, but somehow I think we would’ve gotten along in the kitchen
divinely. Are they commonly used for weddings? Not on a beach in the
Bahamas! Due to their ingredients, they should be refrigerated, which
limits them from weddings in warm environments or at certain times a
year.
Carrot Cake Recipes
Ah…the classic Carrot Cake Recipes. This densely rich and moist spice
dessert, full of brightly orange colored vegetables and toasted nuts,
is delicious. Really? Vegetables in a dessert? No worries. The grated
vegetables have a high sugar content, they soften after baking, and
enhance the texture, flavor and color. This spice dessert is almost
always topped with cream cheese icing – which is the perfect complement
to its flavor, and looks divine.

We love any sponge cake recipe because they don't contain any fat!
Really, they are dietary friendly, with variations of them suitable for
lactose-intolerant, low cholesterol and even vegan diets. So if you
have many guests with special dietary restrictions, this may be the
option for you.
